“Packed with toasted lees flavor, this round, unctuous white has a sparkle of minerality in the finish. That tightens it from fat and rich to a brighter end, for gambas al ajillo.”
Facing south, the Adega Valdés vineyards rise steeply beside the banks of the Ulla River.
To extract aroma, the must was cold-soaked for period of 6 hours at 10°C. After pneumatic pressing, the clean juice was left to ferment in stainless steel tanks at 18°C, then stabilized at –4°C for one week before filtration and bottling.
Albariño Gundián is the perfect complement to shellfish and seafood – from raw oysters, seared scallops, and broiled fish to bouillabaisse!
